Banana Bread Recipe
Ingredients
- 125 g unsalted butter, softened (Nutellex for LF)
- 1.5 cups brown sugar
- 2 eggs
- 1 cup mashed ripe bananas
- A splash of vanilla extract
- 250 g plain flour (I use any store-bought GF flour mix)
- 1 tsp bicarb soda
- 1 tsp ground cinammon
- 0.5 cups milk (LF optional)
Method
- Preheat oven to 180°C.
- Beat the brown sugar and the softened butter until they form a smooth, creamy mixture.
- Beat in the eggs, mashed bananas and vanilla.
- Add the flour, bicarb soda and ground cinnamon. You should probably sift these, but I'm lazy. Mix them a bit, then add the milk. Beat thoroughly until the batter is completely mixed.
- Line a bread/cake tin with baking paper and pour in the batter.
- Bake for 1 hour or until skewer inserted comes out clean. Let it cool down in the tin before turning it out to cool further on a rack.
- Let it cool completely before cutting it. Or don't if you're impatient. Enjoy!
